When it comes to not knowing when to quit, the ultimate example has to be the Police Academy series. The first was okay but it was all downhill from there. They were pretty bad by the fourth film, and even then went on to make three more, each worse than the one before.
I enjoyed the first Austin Powers film, and while the sequels weren't as good, at least they were watchable (and I agree, they had reached the point where it was time to quit). It helps if you're familiar with some of the 1960s era spy flicks they were trying to parody - besides Bond, the Flint and the Matt Helm series come to mind. I recently rewatched the Matt Helm series and would recommend them to anyone for a bad movie night.
